Raduone Eljaouhari came to the United States in 1994 through the Walt Disney World college program, and worked at the Moroccan Pavilion at the Epcot Center. There he could share his culture with tourists from all over the world, and this experience sparked inspiration to one day start a Moroccoan restaurant of his own. After coming to New York and taking a position at the Plaza Hotel, Raduone secured a loan and opened Zerza. His mother, a chef, even traveled from Morocco to help build the menu for his LES restaurant.
